Meat grills of Makasar

In Indonesian, this food is called Sate Makasar. It is made of tender meat which is grilled, then served with sour star-fruit (cucumber tree) which mixed together with milled peanuts. It tastes delicious, with a rather spicy hot, sour and sweet. Here’s the recipe :

ingredients :

1 kg good quality meat

milled spices :

4 spoonful of coriander
1 spoonful of dill
10 walnut seeds
10 onions
10 garlic
2 cm of turmeric
4 pieces of galingale

directions :
* wash thoroughly meat, then braise it until mild.
* attenuate all the spices ( in the list ) , get it into the braising-meat, cook for about 25 minutes until the flavor diffuses. keep cooking the meat until the water dry-wet.
* skew the meat and intestine with skewer ( usually made of bamboo) criss-cross. Grilled.
* serve the sate with starfruit sauce.

the sour-starfruit sauce :

ingredients :

20 pcs red chilli
10 pcs hot chilli
1/4 kg of peanut , fried.
10 sour-starfruit ( cucumber tree)
one edge of tea-spoon salt

directions :

* attenuate red chilli, hot chilli, and fried peanuts.
* heat frying oil, fry the attenuated spices, add water, cook.
* last, pour the sour-starfruit into the dish.
* serve the sauce with the grilled meat ( sate )
